Although coffee and milk have been consumed in Europe for centuries, legend has it that David Schomer started the latte art craze in the United States in the mid-1980s. In parallel, an Italian named Luigi Lupi was doing the same thing around the same time. Regardless of who was the first to decorate the coffee with a pattern, it is certain that the custom has been preserved and perfected since then by passionate baristas from all corners of the world. Now you can give a latte art course as a gift.
Latte art course: the science of milk that turns into hearts
Anyone who has tried to make latte art by pouring regular milk into coffee quickly realized that this is not possible. The reason why coffee can be decorated with various shapes has to do with science. To achieve what is called "microfoam", a barista adds foam to the milk and heats it rapidly, altering the physical characteristics of the milk, this procedure being scientifically called "denaturation".
